What is the purpose of knowing which are high acid foods?

Consuming high acidic foods will not make the contents of your stomach more acidic, since the hydrochloric acid is more acidic than any foods you can eat (it has a pH of about 1 while the most acidic food, lemon, has a pH of 2).

Knowing which foods are high in acid is useful for reflux (heartburn) sufferers. High-acid foods make the symptoms of Gastro-esophageal reflux disease (GERD/GORD) worse. (2)Gaude GS. Learning the acidity of foods is also useful for culinary purposes including: preservation, application as marinates of meats and seafood, different requirements of food preparation, cooking and storage.
